Originally from Lyon, France, Balthazar discovered his passion for hospitality at an early age. The ringing of the dinner bell summoned him and his six siblings to dinner every night and introduced him to the connection between food and people. It was a bond that continued to this day, with food greatly influencing his way of life.

Six years after graduating from École Hôtelière de Lausanne in 2001, Balthazar opened his own restaurants in Bordeaux. Having worked with Restaurant Daniel’s former Executive Pastry Chef Francois Payard, Balthazar had the opportunity to meet Daniel Boulud in 2014. He joined the group as General Manager of Café Boulud & d|bar in Toronto, Canada, where he oversaw the pre-opening, launch and day-to-day operations of the French Brasserie and huge bar.

After three years, Balthazar joined Freed F+B and Trademark Hospitality as Director of Operations, eventually opening his own hospitality group. In 2018 he reunited with Daniel and assumed the role of General Manager at db Bistro & Oyster Bar. He and his wife, along with their two sons, now happily call Singapore their home.
